Wine and Chocolate Pairing

  1. Think red. One of the best things about red wine is that it can stand on its own when paired with the decadent taste of chocolate.
  2. Dark chocolate works best with the richness of Cabernet Sauvignon, while the fruitiness of full-bodied Shiraz complements both bittersweet and dark chocolate.
  3. Milk chocolate pairs well with a fortified wine like port.
  4. For sweeter varieties of chocolate, the wine should be at least as sweet, if not a touch sweeter, than the chocolate you are serving.
  5. Contrary to popular belief, champagne apparently fairs better with fruit than chocolate. The bubbly fruit notes tend to clash with the dark cocoa flavours.
  6. To maximize your wine and chocolate pairing, first swirl, sniff and sip your wine and let it coat your mouth. Grab a piece of chocolate, sniff, bite (quality chocolate has a good snap) and let the chocolate melt on your tongue. Resist the temptation to chomp down (I know easier said than done). To finish take another sip of wine.
