Wine and Chocolate Pairing 101:
- Think red. One of the best things about red wine is that it can stand on its own when paired with the decadent taste of chocolate.
- Dark chocolate works best with the richness of Cabernet Sauvignon, while the fruitiness of full-bodied Shiraz complements both bittersweet and dark chocolate.
- Milk chocolate pairs well with a fortified wine like port.
- For sweeter varieties of chocolate, the wine should be at least as sweet, if not a touch sweeter, than the chocolate you are serving.
- Contrary to popular belief, champagne apparently fairs better with fruit than chocolate. The bubbly fruit notes tend to clash with the dark cocoa flavours.
- To maximize your wine and chocolate pairing, first swirl, sniff and sip your wine and let it coat your mouth. Grab a piece of chocolate, sniff, bite (quality chocolate has a good snap) and let the chocolate melt on your tongue. Resist the temptation to chomp down (I know easier said than done). To finish take another sip of wine.
